Creamy Cajun Chicken Pasta

Creamy Cajun Chicken Pasta

Pasta is one of my ultimate guilty pleasures. It is definitely a comfort food for me.

I also love creamy sauces. Also comforting and something I often find myself craving. My kids love both too. That is why I love this meal.

It is easy and fast, just like a dinner should be.

It has lots of yummy flavor and is full of chicken and bell peppers.

It also has a cream sauce that isn’t nearly as bad for you as it could be. It’s a slight variation (it’s a bit faster) of this sauce that we love.

Everyone in my family loves it and eats it willingly. That’s really why I love it so much!

Creamy Cajun Chicken Pasta

Ingredients

  • 12 oz spaghetti (or other pasta)
  • 1 tablespoon butter
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 tablespoon olive oil
  • 1 1/2 pounds boneless, skinless chicken breasts cut into bitesize pieces
  • 2 1/2 teaspoons cajun seasoning, divided
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 4 oz cream cheese, cut into cubes
  • 1 1/2 cups milk

Instructions

  1. Cook pasta according to package directions.
  2. Heat 1 tablespoon butter in medium skillet over medium-high heat. Saute onion and peppers until onions are soft, about 5 minutes. Remove from skillet and set aside.
  3. Sprinkle chicken with 1/2 teaspoon cajun seasoning.
  4. Heat olive oil in same pan and cook chicken until no longer pink and cooked through. Set aside with onions and peppers.
  5. Heat last tablespoon of butter in same pan over medium high. Add garlic and cook just until fragrant.
  6. Add cubes of cream cheese and stir until melted and creamy.
  7. Slowly add milk, whisking to combine. Continue cooking for a few minutes until slightly thickened.
  8. Whisk cajun seasoning into sauce, then add chicken, vegetables, and the cooked and drained pasta.
  9. Stir to combine and heat through.
  10. Serve immediately with fresh parmesan on top.
