Pasta is one of my ultimate guilty pleasures. It is definitely a comfort food for me.
I also love creamy sauces. Also comforting and something I often find myself craving. My kids love both too. That is why I love this meal.
It is easy and fast, just like a dinner should be.
It has lots of yummy flavor and is full of chicken and bell peppers.
It also has a cream sauce that isn’t nearly as bad for you as it could be. It’s a slight variation (it’s a bit faster) of this sauce that we love.
Everyone in my family loves it and eats it willingly. That’s really why I love it so much!
Creamy Cajun Chicken Pasta
Ingredients
- 12 oz spaghetti (or other pasta)
- 1 tablespoon butter
- 1 onion, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 tablespoon olive oil
- 1 1/2 pounds boneless, skinless chicken breasts cut into bitesize pieces
- 2 1/2 teaspoons cajun seasoning, divided
- 1 tablespoon butter
- 2 cloves garlic, minced
- 4 oz cream cheese, cut into cubes
- 1 1/2 cups milk
Instructions
- Cook pasta according to package directions.
- Heat 1 tablespoon butter in medium skillet over medium-high heat. Saute onion and peppers until onions are soft, about 5 minutes. Remove from skillet and set aside.
- Sprinkle chicken with 1/2 teaspoon cajun seasoning.
- Heat olive oil in same pan and cook chicken until no longer pink and cooked through. Set aside with onions and peppers.
- Heat last tablespoon of butter in same pan over medium high. Add garlic and cook just until fragrant.
- Add cubes of cream cheese and stir until melted and creamy.
- Slowly add milk, whisking to combine. Continue cooking for a few minutes until slightly thickened.
- Whisk cajun seasoning into sauce, then add chicken, vegetables, and the cooked and drained pasta.
- Stir to combine and heat through.
- Serve immediately with fresh parmesan on top.
