There is not a whole lot I need to say about this recipe. I mean, look at that picture!
Ooey, gooey goodness!
As a matter of fact, that’s what my husband thought I should call this treat. Gooey Goodness. I didn’t think it was quite descriptive enough, but it definitely does apply.
Gooey and perfect Rice Krispie treats with peanut butter cookie dough (no eggs), chocolate chips and mini Reese’s Peanut Butter Cups, and marshmallows in the middle of them. Then I went ahead and topped it all with a rich chocolate frosting.
These are rich and gooey and scrumptious.
Peanut Butter Cookie Dough Rice Krispie Treats
Ingredients
- 3/4 cup flour
- pinch of salt
- 1/4 cup butter, softened
- 1/2 cup peanut butter
- 3 tablespoons sugar
- 3 tablespoons brown sugar
- 1 teaspoon milk
- 1 teaspoon vanilla extract
- 1 cup miniature marshmallows
- 1 cup chocolate chips and/or mini Reese's Peanut Butter Cups
- 1 (10 oz) bag marshmallows
- 4 to 5 cups Rice Krispies cereal
- 1/2 cup butter
- 1/2 teaspoon vanilla extract
- 1 1/2 cups chocolate chips
- 1/4 cup cream or milk
- 2 tablespoons butter
- 1/2 teaspoon vanilla extract

Instructions
- In large bowl, mix flour, salt, butter, peanut butter, sugars, milk and vanilla together until it forms a soft dough. Set aside.
- Place marshmallows and butter in large microwaveable bowl. Microwave until butter and marshmallows are melted, about 90 seconds, checking and stirring every 30 seconds.
- Stir the vanilla into the melted marshmallows, then add the Rice Krispies cereal and stir to combine.
- Press half of the Rice Krispie mixture into a greased 9x13 pan. You can use butter on your hands or even just spray with cooking spray so they don't stick to the mixture, and press well into the pan.
- Crumble the cookie dough over the Rice Krispie treats in the pan, then sprinkle with the marshmallows and the chocolate chips/Reese's PB cups (I used half a cup of each).
- Then very carefully (grease your hands again) spread the rest of the Rice Krispie treats over the cookie dough, marshmallows and chocolate. It doesn't have to be perfect since you're going to cover it all in frosting anyway.
- Melt the chocolate chips just until stir-able, then add the rest of the ingredients and stir until smooth.
- Spread over the entire glorious confection.
- Allow to cool and set in the fridge or freezer for 30 minutes before serving if desired.
