Days are sure getting busier aren’t they? There is always so much going on this time of year and instead of more time, the days are actually getting shorter.
I’ve been relying very heavily on quick meals or throw together crock pot recipes. To be honest, though, most days I just wish dinner would take care of itself.
Which is what makes this recipe so awesome. Stick 3 things in the crock pot, leave it for 8 hours and dinner is ready (as long as you remember to plug in and turn on the crock pot – both of which I have forgotten at different times).
I had tried another recipe involving root beer pulled pork and it didn’t turn out that great. Maybe it was the type of roast that I used, I’m not sure. But this recipe and this roast turned out fantastic! The added element of the liquid smoke really made it for me and my family. Just a bit of smokiness, but you’ve still got plenty of sweet from the root beer. Our whole family loves pulled pork, and this root beer pulled pork has definitely become a favorite!
We ate this on Pretzel Buns, with this Root Beer Barbecue Sauce. You can use any buns you’ve got and any barbecue sauce you love. You could also put this on nachos like these, or even make a pizza with the leftovers. So many possibilities. If your roast is big enough, you could try them all and have meals for a couple of days! Score!
Ingredients
- 1 boneless pork butt, about 3 pounds
- 3 cups root beer
- 1/2 cup liquid smoke
Instructions
- Spray crock pot with no-stick spray.
- Place roast in crockpot.
- Pour root beer and liquid smoke over top.
- Cook on low for 8 hours, it should smell deliciously smoky and be fork tender.
- Serve on buns with your favorite barbecue sauce.
