These chocolate waffle cookies are a long time family favorite.
It’s even one of the few memories I’ve retained from when I was about 7. Someone brought us some of these cookies and the whole family very quickly had a new favorite.
The only problem is finding the right kind of waffle iron, which is why I haven’t made them in a few years.
I finally just gave in and made them with the one I’ve got. And they still tasted amazing!
Because the key is in the frosting! Make sure to frost them right when they come off of the waffle iron and then they’ll be perfect and gooey! I’ve included the recipe for my favorite chocolate frosting, but you could definitely use store bought frosting as well! Just enjoy the yumminess!
Ingredients
- 1 cup butter, melted
- 6 tablespoons cocoa
- 1 1/4 cups sugar
- 4 eggs
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 recipe chocolate frosting, or can of frosting
Instructions
- In large bowl, mix together melted butter and cocoa. Allow to cool for 10 minutes.
- Add sugar, then eggs one at a time, mixing well.
- Add flour, salt, and vanilla and stir to combine. Dough will be thick.
- Depending on your waffle iron, use between 1 teaspoon and 1 tablespoon and drop into each section of the iron.*
- Cook for just a few minutes and then frost immediately.
Notes
*In my big belgian waffle iron, I used my tablespoon cookie scoop and that worked perfectly.
Ingredients
- 1/2 cup butter
- 2/3 cup cocoa
- 3 cups powdered sugar
- 1/3 cup milk
- 1 teaspoon vanilla
Instructions
- Melt butter and stir in cocoa.
- Slowly add powdered sugar and milk, alternately, to desired consistency.
- Add more milk if needed.
- Add vanilla.
