Thai Chicken Lettuce Wraps are a simple dinner that are not only easy to put together but healthy. My family all loves to eat lettuce wraps. Because it’s a certain healthy choice, I try any recipe I find.
They include rather simple ingredients. Start with chicken breast and cut into small pieces – no bigger than 1/2 inch. One method that I have used for recipes like this is to put the chicken in the food processor and pulse just until the chicken is in small bits, but not to the point of being “ground”.
Then mix together the sauce ingredients and set aside.
Cook the chicken in a pan with olive oil and then add the red pepper strips. Once the peppers have softened and the chicken in cooked through, add the sauce (unless you want to serve the sauce separately) just until heated through.
Serve the chicken immediately on top of lettuce leaves and with chopped peanuts and cilantro.
A delicious, simple and healthy meal full of Thai flavors and sure to please even the pickiest of eaters.
Ingredients
- 2-3 chicken breast
- 1 red bell pepper, sliced thin
- 2 Tablespoons olive oil
- 1 head butter leaf lettuce*
- 1/4 cup unsalted peanuts, roughly chopped (optional)
- cilantro and lime wedges for garnish (optional)
- For the Sauce
- 4 Tablespoons peanut butter (powdered peanut butter mixed with enough water to make peanut butter consistency works great and cuts down on fat and calories)
- 2 Tablespoons soy sauce
- 2 Tablespoons water
- 1/2 teaspoon garlic powder
- 2 teaspoons brown sugar (can sub honey, stevia or favorite sugar substitute)
- 1/8 teaspoon sesame oil
Instructions
- Cut chicken into small (1/2 inch) pieces. Whisk together sauce ingredients and set aside.
- Heat oil in a pan over medium heat. Add chicken and cook about 5 minutes until pink is almost gone. Add red peppers and cook another 2-3 minutes until peppers are tender and chicken is cooked through.
- Add sauce to the pan** and mix until heated through. Serve immediately.
- Use lettuce leaves as wraps, placing a spoonful of chicken mixture and sprinkling with chopped nuts and cilantro.
Notes
*We use different types of lettuce for our wraps depending on what we can find. Both Iceberg lettuce and romaine are easy to find and we like. **You can serve the sauce on the side, allowing everyone to put as little or as much as they want on their wraps. I mixed it in to avoid this very thing with my children.
