This amazing potato casserole is most commonly referred to as funeral potatoes and I’m not sure why. But they sure are delicious.
My family has them when we all get together, so usually at holidays. The last time we all got together, we added the green chiles and everyone loved it! It’s a small variation, but it added quite a kick!
These Green Chile Cheesy {Funeral} Potatoes would be perfect for any gathering or special dinner, even just Sunday dinner. They’re rich and cheesy and you can never have just one helping! They are perfect with one of theseĀ ham dinners, or even corned beef.
Green Chile Cheesy {Funeral} Potatoes
Ingredients
- 24 oz (about 6 cups) southern style hash browns, defrosted
- 2 cups sour cream
- 2 cans cream of chicken soup
- 1 cup grated pepper jack cheese
- 1 cup grated cheddar cheese
- 1 small onion, chopped finely
- 2 (4 oz) cans chopped green chiles
- 1/2 cup butter, melted
- 1 cup crushed crackers (Cheez-its, Goldfish, Ritz all work well)
Instructions
- Heat oven to 350 degrees F.
- In large bowl combine hash browns, sour cream, cream of chicken soup, cheeses, onion and green chiles and mix well.
- Spread mixture into a 9x13 baking dish or similar sized baking dish.
- In small bowl, mix together melted butter and crushed crackers.
- Spread butter and crackers over the top of potato mixture and bake in preheated oven for 1 hour.
- Serve while warm.

Question…should this be 2 cans (vs. 2 cups) cream of chicken soup? This sounds like a great variation on these cheesy potatoes. Thanks!
